Spinach and Cheese Stuffed Shells
With temperatures decreasing I am seeking warmth in my grandmother’s recipes. This one does not disappoint…satisfying and irresistible all in one! I would say it’s good for whatever ails you. Give it try!
12 oz package jumbo shells
10 oz package of frozen chopped spinach; defrosted and squeezed dry
1 lb ricotta cheese
2 large eggs
1 ½ cups grated parmesan cheese
Salt and pepper to taste
3 cups marinara sauce, homemade or store bought
1 cup shredded mozzarella (optional)
Preheat oven to 375.
Prepare shells according to package directions; drain.
Combine spinach, ricotta cheese, eggs, parmesan cheese and salt/pepper.
Spread some marinara sauce in bottom of 13 x 9 baking dish. Fill each shell with approx. 2 heaping Tbsp of cheese mixture.
Line shells up in dish; cover with remaining sauce. If desired, sprinkle with shredded mozzarella on top.
Cover dish with foil and bake for 30-45 minutes. Serve warm.
