Polenta Squares
Not every dish needs to be a flavor explosion, sometimes subtle is better. Here is an old-school Italian favorite. I like to keep the recipe clean and simple, then give it oomph with your favorite sauce. Serve with some sauteed broccoli rabe to round it out nicely. Mangia!
1 cup water |
1 cup yellow cornmeal |
3 cups chicken broth |
Shredded Romano or Parmesan cheese |
In a small bowl, combine water with the cornmeal. Then in a saucepan bring chicken broth to a boil. Slowly add in the water/cornmeal mixture. Stir constantly and boil for 4 minutes. Pour into a greased 7×11 baking dish. Sprinkle with cheese. Cool until solid. Cut into squares for serving with your favorite pasta sauce.
