Black Bottom Banana Bars
Best of both worlds – this is a great cross between a banana bread and a brownie! Sometimes I throw a handful of chocolate chips in the bottom layer to bring it up a notch. It’s a delicious afternoon snack for the kids. Try ‘em!
1/2 cup bitter, softened | 1 1/2 cups flour |
1 cup sugar | 1 tsp baking powder |
1 egg | 1 tsp baking soda |
1 tsp vanilla extract | 1/2 tsp salt |
1 1/2 cups ripe bananas (3 medium) | 1/4 cup baking cocoa |
Preheat oven to 350 degrees. Grease a 13 x 9 baking dish and set aside. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Stir in bananas. In separate bowl combine, flour, baking powder, baking soda and salt. Add into creamed mixture and mix well. Divide batter in half. Add cocoa into one half and spread into a baking pan. Spoon remaining batter on top and swirl with knife. Bake at 350 degrees for 25 minutes. Cool on wire rack.
